
Simple Leafy Salad with a Crunchy Element

Salad Base
- 100 g mixed leaf lettuce (e.g., arugula, lamb's lettuce, Lollo Rosso)
- 1 spring onion, sliced into rings
- ½ avocado, diced
Crunchy Treat – Honey Pecans
- 60 g pecans
- 1 tablespoon honey
- 1 pinch of sea salt
- 1 pinch of cayenne pepper
Preparation
- Toast the pecans in a dry skillet over medium heat for 2 minutes.
- Add the honey directly to the pan—caramelize for 1–2 minutes until the nuts are glossy. Add salt and cayenne pepper.
- Spread them out immediately on parchment paper and let them cool completely—they will harden as they cool.
- Wash the salad ingredients, spin them dry, and mix them in a large bowl.
- Mix up a fresh dressing of your choice (all 3 recipes in this collection).
- Drizzle the dressing over the salad right before serving—not before, or the salad will wilt.
- Coarsely chop the honey pecans and sprinkle them generously over the top. Serve immediately.

Tip
The honey-pecans will keep for 5 days in a glass jar—make a double batch right away. They’re also great on oatmeal, yogurt, or cheese platters.
